Hearty Beef Casserole

Equipment required: Slowcooker  Preperation time: 10 minutes Cooking time: 3-8 hours Serves: 4-6

Ingredients

750g peeled baby potatoes, diced

1kg diced beef

1-2 stick/s of celery, sliced.

6 baby carrots, halved & sliced

1 chopped red onion, halved & sliced

2.5 cups of beef stock (Campbells recommended)

3 tablespoons of tomato paste (triple concentrate)

1 bottle of Masterfoods redwine & garlic marinade

a couple of sprigs of fresh rosemary 

Method

Seal diced beef on the stovetop

Put all ingredients in the slow cooker (except rosemary)

cook for 3-4 hours on high, or 7-8 hours on low. Do not lift the lid, keeping the moisture trapped allows the meat to stay tender.

Serve topped with rosemary
