A couple of really excellent simple dinners recently. On the left, oven-grilled skirt steak with peanut sauce, rice, avocado and sliced cucumber (and shishito peppers!). On the right, pork larb with rice and diced tomatoes, served as lettuce wraps. On the side I made green beans. For either of these we could have made it even easier by leaving out the cooked vegetables and just eating more raw salad. The peanut sauce is extra good because you can have it for lunch the next day with any protein or veggies you have lying around.
