The spicy kick of buffalo chicken and the richness of beer cheese fondue come together in this delicious sandwich, which is made with crispy grilled bread slices.
Ingredients: 1 lb cooked chicken, shredded. 1/2 cup buffalo sauce. 8 slices bread. 1 cup shredded cheddar cheese. 1/2 cup crumbled blue cheese. 1/4 cup diced green onions. 1/4 cup diced celery. 1/4 cup diced red onion. 1/4 cup unsalted butter. 1/4 cup all-purpose flour. 1 cup beer. 1 cup milk. 1 tsp Dijon mustard. 1/2 tsp garlic powder. Salt and pepper to taste.
Instructions: In a bowl, mix shredded chicken with buffalo sauce until well coated. Divide the chicken mixture onto 4 slices of bread. Top each with shredded cheddar, crumbled blue cheese, green onions, celery, and red onion. Top with remaining slices of bread to make sandwiches. In a saucepan, melt butter over medium heat. Whisk in flour until smooth and cook for 1-2 minutes. Slowly whisk in beer and milk until smooth. Stir in Dijon mustard, garlic powder, salt, and pepper. Cook until thickened, stirring constantly, about 5 minutes. Preheat a skillet or griddle over medium heat. Grill sandwiches until golden brown and cheese is melted, about 3-4 minutes per side. Serve sandwiches with beer cheese fondue for dipping.
