Beet salad is a constant in my kitchen. Someone asked me if they could make this recipe using canned or packaged beets. Sure! Though roasting the beets brings out such a marvelous earthy flavor, so I prefer that. This recipe (on the blog and in the profile) includes roasted chick peas.
