Rainbow Pepper Peanut Slaw is a colorful and crunchy salad made with shredded cabbage, carrots, and a tasty peanut dressing. It has the colors and tastes of different bell peppers. This salad is great as a side dish at a barbecue or as a cool summer salad.
Ingredients: 1 cup shredded red cabbage. 1 cup shredded green cabbage. 1 cup shredded carrots. 1/2 cup thinly sliced red bell pepper. 1/2 cup thinly sliced yellow bell pepper. 1/2 cup thinly sliced orange bell pepper. 1/2 cup thinly sliced green bell pepper. 1/4 cup chopped fresh cilantro. 1/4 cup chopped peanuts. 1/4 cup creamy peanut butter. 2 tablespoons rice vinegar. 2 tablespoons soy sauce. 1 tablespoon honey. 1 tablespoon lime juice. 1 teaspoon sesame oil. Salt and pepper to taste.
Instructions: Shred the red cabbage, green cabbage, carrots, and all the bell peppers. Put them all in a large bowl. Add the peanut butter, rice vinegar, soy sauce, honey, lime juice, and sesame oil to a different small bowl. Use a whisk to mix the ingredients well and make the peanut butter smooth. Add the peanut dressing to the slaw mix and mix everything together until the dressing covers everything evenly. Add salt and pepper to taste to the slaw. Add the chopped peanuts and cilantro to the top of the slaw. Put the Rainbow Pepper Peanut Slaw in the fridge for at least 30 minutes before you serve it. Enjoy your colorful and tasty slaw while it's still cold.
