This easy vegan green bean casserole is a delicious twist on the classic dish, featuring fresh green beans, savory mushroom sauce, and crispy fried onions. It's perfect for holiday gatherings or any time you're craving a comforting side dish.
Ingredients: 1 lb fresh green beans, trimmed and halved. 2 tbsp olive oil. 1 onion, diced. 3 cloves garlic, minced. 1 cup sliced mushrooms. 2 tbsp all-purpose flour. 1 1/2 cups vegetable broth. 1 cup unsweetened almond milk. 1 tsp soy sauce. 1/2 tsp dried thyme. Salt and pepper to taste. 1 1/2 cups crispy fried onions store-bought or homemade.
Instructions: Before you start cooking, heat the oven to 375F 190C. Warm up some water in a pot. After you add the green beans, blanch them for three to four minutes. Remove the water and set it aside. Put the olive oil in a big pan and heat it over medium-low heat. When you add the diced onion, cook until the onion turns clear. When you add the mushrooms and garlic that has been minced, cook until the mushrooms are soft. Add the flour to the onion and mushroom mix and stir it in all the time for one to two minutes. Add the vegetable broth and almond milk slowly while stirring all the time until the mixture gets thick. Add the dried thyme, soy sauce, salt, and pepper, and mix well. Add the green beans that have been blanched and stir them around in the pan until they are well covered in sauce. Move the green bean mix to a baking dish, and then top it with the fried onions. Put the dish in an oven that has already been heated up and bake it for 20 to 25 minutes, or until it is bubbling and the onions are golden brown. Enjoy while hot!
