Easy Vegan Triple Berry Crisp
Strawberry Rhubarb Crisp
Berry Crisp*
*because younger kidlet insists, "Apples are a berry, Para!" and they is right.
Prep Time: 45 min. (mostly peeling/cutting the apples)
Cook Time: 40 min.
Ingredients (all measurements are approximate & adjustable):
6-8 c. fruit (3:1 firm:soft, i.e. 6 c. apples + 2 c. blackberries)
1/4 c. white sugar
1 c. oats
1/2 c. flour
1 c. dark brown sugar, packed
1 Tbsp cinnamon (plus a sprinkle)
1 tsp ginger
1/3 c. butter, softened (coconut oil is a great veg sub)
3/4 c. chopped nuts (optional)
Directions:
Peel, cut, & core firm fruit. Mix with soft fruit and white sugar in baking dish (approx. 3 qt size). Sprinkle top with cinnamon & mix again.
In medium/large bowl, mix remaining ingredients, except nuts. Cut in butter until pea/blueberry size. Add nuts, stir.
Cover berries with topping mix.
Bake in 375°F oven for 40-45 minutes. (Try to put in oven about 30 minutes before roast, or stew, is done).
note: the family universally agreed that the amount of brown sugar should be reduced. Will try one cup next time.
