Ingredients: 4 boneless, skinless chicken breasts. Salt and black pepper to taste. 1/2 cup all-purpose flour. 4 tablespoons olive oil. 8 oz 225g cremini or button mushrooms, sliced. 3/4 cup Marsala wine. 3/4 cup chicken broth. 2 tablespoons unsalted butter. 2 tablespoons fresh parsley, chopped.
Instructions: Season the chicken breasts with salt and black pepper. Dredge each chicken breast in flour, shaking off the excess. In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook until golden brown on both sides, about 5 minutes per side. Remove and set aside. In the same skillet, add sliced mushrooms and cook until they release their moisture and become golden brown. Pour in Marsala wine, scraping the browned bits from the bottom of the skillet. Stir in chicken broth and bring the mixture to a simmer. Return the chicken breasts to the skillet and simmer in the sauce for an additional 10 minutes, or until the chicken is cooked through. Stir in butter and fresh parsley, allowing the sauce to thicken. Adjust salt and pepper to taste. Serve the Best Chicken Marsala over pasta, rice, or mashed potatoes.
