In ‘hand-crafting’ mode, the machinery is as “gentle as a human hand”. Here, Garnacha being adjusted to give 70%+ whole berries to allow the skins to ‘release’ their color and phenolic compounds when ‘they’ are ready rather than ‘mechanically macerating them’ (i.e.: pulverizing the berries to force the crushing of the skins). This approach causes the resultant wine to show a greater level of ‘finesse’ and softness on the palate.
