Authentic Keema Matar Curry With Bison Primal Blend

Keema matar is a “dry” curry of Pakistani origin, richly spiced with tender green peas. It’s bursting with all the flavor of curry spices, but without the added liquid that’s typically found in most curries we eat in America. You can easily use garam masala powder in lieu of the whole spices, but if you can use the whole cloves, peppercorns and cinnamon stick it really adds a depth of flavor to the dish that cannot be achieved otherwise. Activating the spices in the oil helps to add layers of flavor to the curry. If you have ghee, it would be a delicious alternative to the bison tallow. Otherwise any cooking oil will work just fine. I decided to use our bison primal blend for this dish. It bestows amazing health benefits with all the great taste of our best selling ground bison.

Ingredients:

How To Make Meatloaf In A Slow Cooker Or Instant Pot

Meatloaf is one of my all time favorite foods. It’s really easy to make and you’d be hard pressed to find a meal that’s more satisfying or comforting. Meatloaf is quick to prepare, but can take up to an hour to cook in the oven. Luckily, there is a way to prepare this meal during the day and have it ready right when you get home from work. If you have a slow cooker or Instant Pot, you can cook your meatloaf while you’re away from home and simply finish it with a few minutes under the broiler right before serving. This recipe uses bison and wild boar, which is my favorite combination for meatloaf. The fattier wild boar meat balances well with the lean bison and the flavors of both are excellent.

Ingredients:

This bison quesadilla recipe has all the flavor of the Southwest, and is secretly full of powerhouse superfood nutrition. I love to use a Mexican blend cheese or pepper jack for quesadillas, but you can easily just use whatever you have on hand that gets nice and melty. Black beans and green chile powder make this recipe truly Southwestern, with plenty of cumin and cilantro. The cilantro cream sauce is like the cherry on top and takes this quesadilla from delicious-but-typical to really outstanding. Any of our ground meats would be great in this recipe, but I chose our Primal Blend for its amazing health benefits.

Elk and bison is one of my favorite combinations of our ground meats. The flavors of the two together are really excellent and make for amazing burgers, tacos, meatloaf, etc. Wrapping the whole thing in our delicious duck bacon is the cherry on top of this ultimate meatloaf experience.

If you’ve never heard of salteñas before, they’re a special variety of meat empanada widely available as a traditional street food in Bolivia. They have a spicy and slightly sweet flavor, a distinctive yellow colored dough and are filled with meat, potatoes, slices of hard boiled egg, olives and raisins. They’re incredibly flavorful and delicious. Bring the taste of Bolivia into your own kitchen with this recipe – they’re a hit every time. This makes about 20 salteñas, easily enough to enjoy and share.

Ingredients:

To make the meat filling:

🍴 1 pound ground beef, wild boar, lamb, bison or elk 🍴 1 packet of unflavored gelatin 🍴 4 cups bison bone broth 🍴 7 tablespoons bison tallow or butter 🍴 2 tablespoons achiote (paste or powder) 🍴 1 onion, finely chopped 🍴 3 large potatoes, diced 🍴 1 cup peas (frozen is fine) 🍴 ½ cup parsley, finely chopped 🍴 ½ cup coconut sugar 🍴 1 tablespoon ground cumin 🍴 1 tablespoon dried oregano 🍴 1 tablespoon sea salt 🍴 1 tablespoon freshly ground black pepper 🍴 3 hard boiled eggs 🍴 Olives & raisins as desired

These hotdogs are definitely a team favorite – we even had them for co-founder JP Bulow’s birthday dinner last year. He claims that this birthday dinner was one of the best meals of his life, which just goes to show that food doesn’t have to be fancy to be memorable.

This recipe is the perfect easy, quick way to make lasagna – the secret is using pre made cheese raviolis instead of layers of lasagna noodles. I like to use a combination of ground bison and ground wild boar meat. The flavors are so good together and the fattier wild boar perfectly complements the lean and tender bison meat. You can whip this up as a quick dinner and enjoy the delicious results in about an hour total (and around 40 minutes are hands off time in the oven). If you don’t have bison broth on hand, just substitute water. It’ll still turn out delicious!
