Appa are hoppers, made from a batter of rice flour and coconut milk which is poured into a hot hopper pan. You can “smoosh” the appa with your fingers and have it with dal or curry. Bithara Appa has an egg broken into it. Uncle also tried the cheese appa, basically a cheese appa turnover. The curry accompaniment today is a vegetarian cauliflower which is cooked with potato, carrot, coconut cream and pandan. The appa is served with Pol Sambol - freshly grated coconut, red onions, dried whole chilies, lime juice, salt and Maldive fish flakes).
