I D I & A P P A M The perfect Sri Lankan breakfast. Made by Nandasiri Alwis and wife Rumani at 7 Siri - Taste Of Sri Lanka, Sandringham. Appa are hoppers, made from a batter of rice flour and coconut milk which is poured into a hot hopper pan. You can “smoosh” the appa with your fingers and have it with dal or curry. Bithara Appa has an egg broken into it. Katta sambol of chilli, onion, curry leaf and lime goes well with appa. Another breakfast favourite is Idi Appa (string hoppers). In Malaysia we call them Putumayam. The soft dough made from rice flour and water is placed in a spring hopper press and squeezed into mats to make the noodle-like hopper, which is then steamed to make mounds of string hoppers.
