Tomato, Endive and Pear salad

Ingredients:

For dressing:

4 tablespoons olive oil

2 tablespoons fresh lemon juice

1 ½  tablespoon maple syrup, or more to taste

1 ½  tablespoon mustard

1 small onion, finely chopped (optional)

salt and black pepper, to taste

For the Salad:

100g couscous

1 bag  endive

1 portion tomatoes cut in pieces

1 large pear, sliced or apple or another fruit of choice.

1 small handful of hazelnuts, lightly toasted, finely chopped

Method:

For the dressing: Combine olive oil, lemon juice, maple syrup, mustard, shallot, salt, and pepper in a small glass jar. Shake it well.

For the couscous, cook according to instructions on the packet.i

Set the cooked couscous aside and let it cool down.

Combine the cooked couscous with the endive, tomatoes, and fruit.

Finish with hazelnuts and maple mustard dressing to taste.
