Grilled Tempeh Salad
Marinated the tempeh in a chili, maple, soy mixture.
Greens include: Kale, Brussel Sprouts, Cabbage, Romain, and Radicchio
Extras: Cranberries, Sunflower Seeds
Dressing: Light Red Pepper Vinegarette
Doing a juice cleanse for the next 3 days!
Super excited. First juice of the day tastes good so far!
Update: that vegan pesto pasta was absolutely delicious! I can’t believe how much flavor it had.
I’m honestly impressed with my homemade pesto. I think I know a way to make it even lower calories next time too.
Todays goal was “under 1000” which I was off by 4 calories which I was actually due to going out to breakfast with a friend but here was my healthy low cal dinner.
Air Roasted Sprouts w/ steamed potatoes with parsley and an Air Roasted Pork Chop. This dinner was only 342 calories and extremely filling.
(I used 0 cal cooking spray instead of butter or oil)
