Chinese Truffles
When you think of truffles, Italy and France immediately come to mind. I know there’s also a big truffle boom in Australia now, and my Eastern European friends have been bringing me some great varieties from Croatia. But recently, I got my first taste of Chinese truffles...
There are areas in China that are known for their abundance of mushrooms, and as truffles are a fungus, they’re quite common as well we’ve discovered. Realizing their potential value, the Chinese are now harvesting them, but fortunately for us, the prices are still quite low here compared to what I have paid in the past back home. Mutsumi bought the lot of truffles you see in the picture above at an organic farmer’s market from a group of monks who came down from the mountains for about $30 US!
I’ll admit, we were skeptical about their taste until we tried them! We found them a little sharper and less floral than their European counterparts when eaten plain, but when cooked into our food, the taste and texture were quite comparable, I felt. Here’s a look at what Mutsumi made...

Now I’m no expert, and I have no clue how these Chinese truffles would fare on the international market, but for our needs here in Shanghai, their taste is spot on and the price is right!
BHL Book Feature: Black Truffles!
One of the most sought after and expensive edible mushrooms in the world is the Black Truffle (Tuber melanosporum). Second only to White Truffles, these fungi are highly prized as extraordinary delicacies.
Native to Southern Europe, truffles are notoriously hard to find. Their fruiting bodies are harvested between November and March by thousands of people with specially trained dogs to sniff out the truffles in their preferred habitats. Originally, female pigs were used to hunt for truffles, like in our featured image, because truffles apparently smell like testosterone to them. Unfortunately, pigs love to eat truffles, so actually collecting the truffles was problematic, which is why dogs have been trained to sniff out these expensive wonders.
Efforts to cultivate these fungi have not been altogether successful, making the values of truffles fluctuate wildly each season. 2016 was apparently a bumper crop for truffles, so the prices have actually dropped. If you want an ounce of fresh black truffles, you can expect to pay around $75, and if you want an ounce of fresh white truffles, prepare to hand over around $230 per ounce!
