For a healthier take on tacos, try these Turkey and Black Bean Baked Tacos. They are filled with healthy ground turkey, black beans, and tasty spices. After being baked to perfection, cheese melts on top. The whole family will love this quick and easy dinner idea.
Ingredients: 1 lb ground turkey. 1 can 15 oz black beans, drained and rinsed. 1 cup diced onion. 1 cup diced bell pepper any color. 2 cloves garlic, minced. 1 tablespoon olive oil. 1 packet taco seasoning. 1 cup shredded cheddar cheese. 8 small taco shells. Salsa, sour cream, and chopped cilantro for garnish.
Instructions: Turn on your oven and heat it up to 375F 190C. Put olive oil in a pan and heat it over medium-high heat. Slice the onions, bell peppers, and garlic and add them. Saut them for about three to four minutes, or until they start to get soft. Remove the pink color from the ground turkey and cook it until it's fully cooked. Use a spoon to break it up as it cooks. Add the black beans and taco seasoning and mix well. Add two to three more minutes of cooking time until everything is hot. Warm up the taco shells in the oven for about 5 minutes while the turkey mixture cooks. Take the taco shells out of the oven and put some of the turkey and black bean mixture inside each one. Shred some cheddar cheese on top of each taco. Put it in the oven and bake for 5 to 7 minutes, or until the cheese melts and bubbles. Serve hot with chopped cilantro, salsa, and sour cream on top.
