Ingredients: 1 can 15 oz black beans, drained and rinsed. 1/2 cup corn kernels fresh or frozen. 1 ripe avocado, diced. 1/2 red onion, finely chopped. 1/2 cup cherry tomatoes, halved. 1/4 cup fresh cilantro, chopped. 2 cloves garlic, minced. 1 lime, juiced. 2 tablespoons olive oil. 1 teaspoon cumin powder. 1/2 teaspoon chili powder. Salt and pepper to taste. 4 tostada shells or small corn tortillas. Optional toppings: sour cream, shredded cheese, hot sauce.
Instructions: In a medium-sized bowl, combine the drained black beans, corn kernels, diced avocado, finely chopped red onion, halved cherry tomatoes, and chopped cilantro.
