Spaghetti Squash Tostadas
A refreshing twist on traditional tostadas, these shrimp ceviche tostadas are bursting with citrusy flavors and fresh ingredients. Perfect for a light and flavorful appetizer or main dish.
Ingredients: 1 lb shrimp, peeled and deveined. 1 cup lime juice. 1 cup orange juice. 1/2 cup red onion, finely chopped. 1/2 cup cilantro, chopped. 2 tomatoes, diced. 1 jalapeno, seeded and diced. Salt and pepper to taste. 8 tostada shells. Avocado slices for garnish.
Instructions: In a large bowl, combine lime juice, orange juice, red onion, cilantro, tomatoes, and jalapeno. Add shrimp to the bowl, mix well, cover, and refrigerate for at least 1 hour. After marinating, remove shrimp from the mixture and chop into smaller pieces. Return chopped shrimp to the bowl and season with salt and pepper to taste. To assemble, place a spoonful of shrimp ceviche on each tostada shell. Garnish with avocado slices. Serve immediately and enjoy!
