Someone’s craving for a Tortilla ;-)
The Taco Fiesta Bubble Up Casserole is a tasty and simple dish that combines the tastes of tacos with the ease of a casserole. It's great for a family dinner or a fun party with a Mexican theme.
Ingredients: 1 lb ground turkey. 1 packet taco seasoning mix. 1 can 16 oz refrigerated buttermilk biscuits. 1 cup salsa. 1 cup shredded cheddar cheese. 1/2 cup sour cream. 1/2 cup diced tomatoes. 1/4 cup diced red onion. 1/4 cup chopped fresh cilantro. 1/4 cup sliced black olives. 1/4 cup sliced jalapeos optional. 1/4 cup sliced green onions. 1/4 cup diced avocado. 1/4 cup crushed tortilla chips. Cooking spray.
Instructions: Start by heating the oven to 350F 175C. Over medium-low heat, cook the ground turkey in a large skillet until it turns brown and is fully cooked. Get rid of any extra fat. Add the taco seasoning mix and mix it well with the turkey. Cook for two more minutes. Cut the buttermilk biscuits that have been in the fridge into fourths. Spray cooking spray on a 9x13-inch baking dish. Spread the biscuit pieces out in the baking dish's bottom. The cooked turkey mixture should be spread on top of the biscuits. Spread the salsa out over the turkey mixture. Add the chopped cheddar cheese on top. The biscuits should be baked in a hot oven for 25 to 30 minutes, or until they are golden brown and done all the way through. Take it out of the oven and let it cool down a bit. Put the sour cream on top of the casserole. Add chopped cilantro, black olives, jalapeos if using, green onions, diced avocado, crushed tortilla chips, and diced tomatoes and red onions on top. Enjoy while hot!

Ingredients: 1 lb boneless, skinless chicken breasts. 1 onion, thinly sliced. 3 cloves garlic, minced. 1 can 14.5 oz diced tomatoes. 2 chipotle peppers in adobo sauce, minced. 1 tablespoon adobo sauce. 1 teaspoon dried oregano. 1 teaspoon ground cumin. 1/2 teaspoon smoked paprika. Salt and pepper to taste. Corn tortillas, for serving. Optional toppings: diced avocado, chopped cilantro, crumbled queso fresco, lime wedges.
Instructions: In the slow cooker's bottom, put chicken breasts. To the slow cooker, add chipsotle peppers, adobo sauce, oregano, cumin, smoked paprika, salt, and pepper. Also add diced tomatoes and onion. Mix the ingredients together and make sure the chicken is covered in the sauce. Cook on low for 6 to 8 hours or high for 3 to 4 hours, until the chicken is soft and can be shred with a fork. Take the chicken out of the slow cooker when it's done cooking and shred it with two forks. Put the chicken back into the slow cooker and mix it well with the sauce. Put warm corn tortillas with chicken tinga on top of them. Add diced avocado, chopped cilantro, crumbled queso fresco, and a squeeze of lime juice on top.

Ingredients: 1 cup brown rice. 2 cups vegetable broth. 1 tablespoon olive oil. 1 small onion, diced. 2 cloves garlic, minced. 1 can 15 oz black beans, drained and rinsed. 1 can 15 oz diced tomatoes, undrained. 1 teaspoon chili powder. 1/2 teaspoon cumin. Salt and pepper to taste. Fresh cilantro for garnish optional.
Instructions: In a medium saucepan, heat olive oil over medium heat. Add diced onion and minced garlic, saut until softened. Stir in brown rice, vegetable broth, black beans, diced tomatoes, chili powder, cumin, salt, and pepper. Bring mixture to a boil, then reduce heat to low, cover, and simmer for 30-40 minutes, or until rice is cooked and liquid is absorbed. Fluff rice with a fork and serve hot, garnished with fresh cilantro if desired.

Salt and pepper to taste. 1 tablespoon olive oil. 8 small corn tortillas. 1 cup shredded lettuce. 1 cup cherry tomatoes, halved. 1/2 cup shredded cheese cheddar or Mexican blend. Fresh cilantro for garnish. Lime wedges for serving.
Instructions: In a large skillet, heat olive oil over medium heat. Add garlic, red onion, and red bell pepper. Saut until softened. Stir in black beans, corn, cumin powder, chili powder, salt, and pepper. Cook for 5-7 minutes. Add cooked quinoa to the skillet and mix well. Cook for an additional 3-5 minutes, allowing flavors to meld. In a separate skillet, warm corn tortillas until slightly crispy on each side. To assemble, spoon the quinoa and black bean mixture onto each tortilla. Top with shredded lettuce, cherry tomatoes, and cheese. Garnish with fresh cilantro and serve with lime wedges on the side.
