How to know when a Black tomato is ripe? Look at the hexagram at the top of the black tomato (created by the suntan of the sepal) to see a reddish color, that’s when you know it is ripe (as shown in the first picture). If it is green (as shown in the second picture), then you know it is unripe.
This tomato variety is absolutely delicious and is known as Indigo Rose. It is black due to the heightened presence of an antioxidant known as a Anthocyanins which are responsible for the purple/black/blue pigmentation in vegetables and fruits. Anthocyanins may have antioxidant and anti-aging benefits and may even enhance memory.
