Blackberry wine update 6 weeks in… Today was racking day and what an exciting time was had. Here you can see Chris syphoning the wine from its original demijohn into a freshly sterilised one to take it off the lees (yeast sediment). We did a hydrometer test which told us that the wine was actually ready for bottling! Upon making this dramatic discovery we quickly poured a little taster glass and much to our relief, it tastes divine. Quite dry, punchy and full-bodied, deep ruby-red in colour. We're going to bottle it up later this week and try to save some for Christmas (although I suspect it may not last that long).
