Blackberry wine update 6 weeks in… Today was racking day and what an exciting time was had. Here you can see Chris syphoning the wine from its original demijohn into a freshly sterilised one to take it off the lees (yeast sediment). We did a hydrometer test which told us that the wine was actually ready for bottling! Upon making this dramatic discovery we quickly poured a little taster glass and much to our relief, it tastes divine. Quite dry, punchy and full-bodied, deep ruby-red in colour. We're going to bottle it up later this week and try to save some for Christmas (although I suspect it may not last that long). We’re making blackberry wine! Our first winemaking venture. We're using a recipe from the brilliant book Booze for Free by Andy Hamilton (another recent birthday gift for Chris). At the weekend we gathered 2kg of blackberries, which took us most of Sunday afternoon.
