Monster Cookies

Makes 3 dozen

1 cup butter or margarine, softened 1 cup brown sugar 1/2 cup sugar 2 eggs 2 1/4 cups flour 1 tsp baking soda 1/2 tsp salt 1 tsp vanilla 1 1/2 cups chocolate chips 3/4 cup chopped walnuts or pecans Candy coating Assorted candies

Cream butter gradually and sugars, beating until light & fluffy. Add eggs & beat until blended.

Combine flour, soda & salt. Add to creamed mixture, mixing well. Stir in vanilla, chocolate morsels & walnuts.

Divide mixture into thirds. Spoon each third onto ungreased cookie sheet, spreading onto an 8 1/2" circle.

Bake at 375 for 12–14 mins or until lightly browned. Gently remove from cookie sheet & let cool on wire racks. Decorate as desired.

Peanut Butter Cups

1/3 lb graham cracker crumbs 1/2 lb butter 1 to 1 1/2 cups peanut butter 1 lb powdered sugar

Combine butter & peanut butter. Add crumbs & sugar. Work together.

Press firmly into cake pan (9x13").

Melt 2 cups chocolate chips and spread over this mixture.

Mom’s Pie Crust Recipe

(For 2 crust pies)

3 cups flour 1 tsp salt 1 heaping cup Crisco

Add:

10 Tbsp water Vanilla

Blend until well mixed.

Homemade Sweetened Condensed Milk

1 cup + 2 Tbsp dry nonfat milk 1/2 cup warm water 3/4 cup sugar

Put it all in a bowl after you have introduced the warm water first. Mix the dry milk powder. Add sugar and stir till smooth.

If sugar needs to be further dissolved, set in a pan of hot water.

Strawberry Preserves

3 1/2 cups slightly crushed strawberries 5 1/2 cups sugar

Mix well in bowl.

Boil hard for one minute:

1 cup cold water 1 box Sure-Jell

Count after full rolling boil.

Pour over berries and sugar and stir 5 minutes.

Let stand overnight.

Can cold in glass or plastic containers and freeze in deep freeze.

(Makes 4 pints.)

Same recipe for raspberries & blackberries but add 1 cup extra sugar.

BBQ Chicken

Cut up chicken or chickens according to family needs.

Cook slowly, basting with 1/2 cup oil, salt, pepper.

When chicken is 3/4 way done, start basting with Dorothy Lynch.

Mexican Casserole

Brown together:

2 lbs hamburger 1 onion, diced

Add:

1 small can chopped green chilies 1 can enchilada sauce 1 can mushroom soup 1 can chile beans

Mix above with ground hamburger and layer in pan in this order:

Corn or flour tortillas Hamburger mixture 1 lb grated longhorn cheese

Bake at 350 degrees for 25–30 min. or until cheese is melted.

Serves 8–10.
