Bohannon Baked Beans- (Hell on Wheels Menu)
This is the second dish in my Hell on Wheels inspired menu.

When I think Wild West, New Frontier, Cowboys...the first food that comes to mind is Baked Beans. My instincts proved right when in one episode, Cullen Bohannon is eating a plate full of food and asks for "more beans". So, I named these classic baked beans made over a open fire, Bohannon Baked Beans. More beans, it is!
+ 2 cups black or red canned kidney beans + 1 small onion, minced
+ 4 slices of bacon, cubed + 1/8 cup molasses
+ salt and pepper to taste + 1/4 cup spicy mustard
+ 1/2 cup ketchup + 1/4 cup brown sugar
Cooking over an open fire: Place the bacon in the bottom of a camp cooking pot. Add to fire and cook 3 minutes. Add in onions. Cook, checking and stirring frequently until browned. Add in beans. Cook another 2 minutes. Add in molasses, salt, pepper. Mustard, ketchup and brown sugar. mix well, and cook until the beans are thick and bubbling.
Cooking on a stove: Do the same as over the fire, cooking the bacon and onions in a medium pot until browned, adding in beans and remaining ingredients. Cook until thick and bubbly over medium heat (10-15 minutes).
