Ingredients: 2 lbs pork belly or pork shoulder, cut into chunks. 1 onion, quartered. 2 carrots, peeled and chopped. 3 celery stalks, chopped. 4 cloves garlic, smashed. 1 teaspoon black peppercorns. 2 bay leaves. Salt to taste. Fresh parsley for garnish.
Instructions: Crack open an onion and put the pork chunks, chopped carrots and celery, smashed garlic cloves, black peppercorns, and bay leaves in a large pot. Fill the pot with water until it covers the vegetables and pork. Add salt to your liking. Set the heat to high and bring the water to a boil. Then lower the heat and let it simmer for one and a half to two hours, or until the pork is soft. Remove any foam that forms on top while the food is boiling. Take the pork out of the pot when it's soft and let it rest for a few minutes before cutting it. Boil the vegetables in the pot and serve them with the pork slices. Add fresh parsley on top, and enjoy a simple and comforting Boiled Pork dish.
