These grilled kofta kebabs made from a mix of beef and pork will take you to the bold flavors of Balkan food. When you grill it with craft beer, the smoky and savory flavors get even better, making it a great dish for barbecues.
Ingredients: 1 lb ground beef. 1 lb ground pork. 1/2 cup breadcrumbs. 1/4 cup finely chopped red onion. 2 cloves garlic, minced. 1/4 cup chopped fresh parsley. 1 teaspoon ground cumin. 1 teaspoon smoked paprika. 1/2 teaspoon cayenne pepper. Salt and pepper to taste. Wooden skewers, soaked in water. Craft beer for basting.
Instructions: In a large mixing bowl, combine the ground beef and ground pork. Add breadcrumbs, chopped red onion, minced garlic, fresh parsley, ground cumin, smoked paprika, cayenne pepper, salt, and pepper. Mix the ingredients thoroughly until well combined. Preheat the grill to medium-high heat. Divide the meat mixture into equal portions and shape them into elongated kefta/kofte around the soaked wooden skewers. Place the kefta on the preheated grill and cook for about 10-12 minutes, turning occasionally until they are browned and cooked through. During the last few minutes of grilling, baste the kefta with craft beer for added flavor and moisture. Remove from the grill and let them rest for a couple of minutes before serving.
