Delicious Boston cream crepe cake cookies that combine the flavors of Boston cream pie with the convenience of cookies. These layered cookies feature delicate crepes, luscious pastry cream, and a rich chocolate ganache.
Ingredients: 1 cup all-purpose flour. 2 tablespoons granulated sugar. 1/4 teaspoon salt. 2 large eggs. 1 1/4 cups milk. 2 tablespoons unsalted butter, melted. 1 teaspoon vanilla extract. 1/2 cup heavy cream. 1/2 cup semisweet chocolate chips. 2 tablespoons cornstarch. 1/3 cup granulated sugar. 1/8 teaspoon salt. 2 large egg yolks. 1 cup whole milk. 1 teaspoon vanilla extract.
Instructions: Mix flour, 2 tablespoons of sugar, and 1/4 teaspoon of salt in a bowl with a whisk. Add milk, melted butter, eggs, and vanilla extract to a different bowl. Use a whisk to mix the ingredients well. Mix the dry and wet ingredients together until a smooth batter forms. Set a skillet that doesn't stick on medium heat. Swirl 1/4 cup of batter around in the pan to make a thin crepe. To get a light golden color, cook for about one to two minutes on each side. Do it again with the rest of the batter. In a saucepan, mix cornstarch, 1/3 cup sugar, and 1/8 teaspoon salt with a whisk. Whisk the egg yolks and milk together in a different bowl. Add the milk mixture to the cornstarch mixture slowly while whisking. Set the pan on medium heat and stir the mixture all the time until it thickens and boils. Taking it off the heat, add the vanilla extract, and then let it cool down. In a saucepan, heat heavy cream until it just starts to simmer. This will make chocolate ganache. Take it off the heat and pour it over the chocolate chips. After one minute, stir it until it's smooth and shiny. Put a thin layer of pastry cream on half of the crepes to make the cookies. Add the last few crepes on top. Cover both sides of each crepe sandwich that has been put together with chocolate ganache. Put the ganache-covered crepe sandwiches on a tray lined with parchment paper and put them in the fridge until the ganache sets. Before serving, drizzle any extra ganache over the cookies.
