I think the thing I love about bread is the same thing that frustrates me about it. It is so simple to make. All you need is water flour and salt. It is so easy to make, anyone can do it with a bit of information and practice and yet it also takes skill. You can do a lot to make your bread really good and high quality, but honestly I don’t think the majority of people would even notice. People are so fussy about what bread they like and yet were I to make a loaf of bread there isn’t much I could to do mess it up so much that someone wouldn’t eat it. Bread seems to just be so full of contradictions.
The main contradiction I find myself thinking of lately is it’s simplicity. Because while I have a knack for bread, and I am so interested in learning all about it, it is hard to keep that passion knowing that it is such a simple thing. Anyone could find themself interested in bread, read a book and likely have the same amount of knowledge that I have, it is hard to grow in that. I do my best to teach myself new things but it is hard. Bread is so old and there is so much lost tradition, and yet it is so hard to find new information on it because well, it’s just bread.
Just bread. Flour, water and salt. I can’t even eat the stuff. But people love it so much and so do I. I love bread but at the same time, it is just bread.
