21. breakfast roll

oh my god, i feel like my eyes have been opened. i have long been a Breakfast Sandwich Enjoyer (though this is a legally distinct item according to wikipedia.)

i reached out to my dear friend scooter about this one, because we had talked about them before briefly. it recommended fried eggs, hashbrowns, sausage, bacon, and ketchup, which i followed exactly (sans ketchup).

and yo, bacon + long roll is perfect. holy shit. it fit perfectly in my bread without having to be oragamied or broken. i crammed in with it the egg and hashbrowns, and it was delicious - fatty and salty. this definitely feels like an on-the-go sandwich, and does so far better than most (looking at you, primanti)

i'd like to try it with brown sauce, which i've never had but sounds tasty. i definitely, definitely want to make my future breakfast sandwiches with bacon on sub-style rolls.

Molnarka a traditional Hungarian yeasted milk accompanying roll. It a brioche type bread. The dough has a bit of sugar, quite a bit of milk and yogurt and you need to raise it all in one and then after portioning it, then after forming it. An egg white wash gives it a nice shiny finish. I followed Limara’s recipe.

Zsemle or zsomle a traditional Hungarian breakfast roll, with a bit of potatoe flakes. I used the recipe from the famous Hungarian baker, Limara’s cookbook. It’s a fast and simple process, you only have to make round shapes. This batch grew into each other, usually they don’t if spaced correctly.
