I've always thought that the Blaze and Breeze are ghosts/lost souls/echos of somthing that was alive, who have a body by manipulating fire/air into solid form. Which is why blaze rods give off heat (the smoke that comes out of brewing stands and end rods giving off light) and wind charges explode into wind.
Whatever the blaze and the breeze were, they were long dead before whatever built the nether fortresses and trial chambers repurposed them.
Oh, interesting! It's definitely cool to think they are some sort of spiritesque being, filled with energy! To hold fire and air into a solid form must require a lot of force to keep together, it'd make sense that some escapes, like blaze rods heating up or breeze rods straight up exploding into wind, like all the air pressure built up inside just comes out all at once!
Now I'm wondering where end rods belonged in the past; currently they're remains, no life in there. Do you think they once belonged to a species that long died out?
