Fruit and vegetable soup au pistou Provencal is a traditional French soup made with fresh vegetables and a tasty pistou sauce. It's healthy, light, and full of the bright flavors of Provence.
Ingredients: 1/2 cup shelled fresh fava beans. 1/2 cup peeled fresh peas. 1/2 cup diced carrots. 1/2 cup diced zucchini. 1/2 cup diced potatoes. 4 cups vegetable broth. 1/4 cup small pasta such as ditalini or elbow. 2 tablespoons olive oil. 2 cloves garlic, minced. 1/4 cup grated Parmesan cheese. Salt and pepper to taste. 1/4 cup fresh basil leaves, chopped. 2 tablespoons pine nuts. 1 tablespoon grated Parmesan cheese for pistou.
Instructions: In a large pot, heat olive oil over medium heat. Add garlic and saut until fragrant. Add carrots, zucchini, and potatoes, and cook for 5 minutes. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes or until vegetables are tender. Meanwhile, cook pasta according to package instructions in a separate pot. Add cooked pasta, fava beans, peas, and grated Parmesan cheese to the soup. Season with salt and pepper to taste. In a blender or food processor, blend basil, pine nuts, and grated Parmesan cheese until smooth. Serve soup hot, drizzled with pistou.
