Brodo di Pollo, or Italian Chicken Soup, is a comforting and nourishing dish perfect for cold days or when you're feeling under the weather. Made with simple ingredients like chicken, vegetables, and pasta, it's a classic Italian recipe that brings warmth and flavor to the table.
Ingredients: 1 whole chicken, cut into pieces. 2 carrots, chopped. 2 celery stalks, chopped. 1 onion, chopped. 3 cloves garlic, minced. 1 bay leaf. 1 teaspoon peppercorns. Salt to taste. 8 cups water. 1 cup small pasta such as ditalini or orzo. Fresh parsley, chopped for garnish.
Instructions: Put the pieces of chicken, carrots, celery, onion, garlic, bay leaf, peppercorns, salt, and water in a large pot. Over high heat, bring to a boil. Then, turn the heat down to low and let it simmer for 1.5 to 2 hours. During that time, skim off any foam that forms on top. Once the broth is tasty and the chicken is fully cooked, take out the chicken pieces and use two forks to shred the meat. Put the shredded chicken back in the pot and get rid of the bones. Follow the directions on the package to cook the pasta until it is al dente after adding it to the broth. Check the seasoning and make changes if needed. Serve hot with fresh parsley on top.
