Ingredients: 2 racks of baby back ribs. 1/2 cup brown sugar. 1/4 cup paprika. 2 tablespoons kosher salt. 2 tablespoons black pepper. 1 tablespoon garlic powder. 1 tablespoon onion powder. 1 teaspoon cayenne pepper. 1/2 cup apple cider vinegar. Wood chips for smoking.
Instructions: The membrane behind the ribs should be removed. To make the rub, combine the brown sugar, cayenne pepper, paprika, kosher salt, black pepper, onion powder, and garlic powder in a bowl. Apply a thick layer of the mixture to the ribs on both sides. For optimal flavor, refrigerate the ribs for at least two hours or overnight after wrapping them in plastic wrap. Set the temperature of your smoker to 225F 107C. To add a smoky flavor, soak wood chips in water for approximately half an hour before adding them to the smoker. After the ribs have been placed on the smoker grates, smoke them for four to five hours, or until the internal temperature reaches 190F 88C. To keep the ribs moist, periodically mist them with apple cider vinegar. After cooking, give the ribs ten minutes to rest before slicing and serving.
