Ingredients: 2 racks of baby back ribs. 1 cup orange juice. 1/2 cup soy sauce. 1/4 cup honey. 3 cloves garlic, minced. 2 tablespoons chipotle peppers in adobo sauce, minced. 1 teaspoon smoked paprika. 1 teaspoon ground cumin. Salt and black pepper to taste. Chopped fresh cilantro for garnish optional.
Instructions: Warm up the grill over medium-high heat. To make the glaze, mix orange juice, soy sauce, honey, minced garlic, minced chipotle peppers, smoked paprika, ground cumin, salt, and black pepper in a bowl with a whisk. Put the baby back ribs on a grill that has already been heated up. Cook for about 30 minutes, turning them over every so often to make sure they cook evenly. During the last 15 minutes of grilling, brush the ribs with the orange chipotle glaze that you have already made. This will let the glaze caramelize and form a tasty crust. Take the ribs off the grill and let them rest for a few minutes. Then cut them into pieces. If you want, you can add chopped cilantro as a garnish. Put extra glaze on the side to go with the tasty baby back ribs.
