Ingredients: 1 cup Fregola Sarda. 2 cups water. 1/2 cup cherry tomatoes, halved. 1/2 cup cucumber, diced. 1/4 cup red onion, finely chopped. 1/4 cup fresh parsley, chopped. 1/4 cup feta cheese, crumbled. 2 tablespoons extra-virgin olive oil. 2 tablespoons balsamic vinegar. Salt and pepper to taste.
Instructions: In a saucepan, bring 2 cups of water to a boil. When the water starts to boil, add 1 cup of Fregola Sarda. Simmer for 10 to 12 minutes, or until the pasta is al dente. Take it out and let it cool down. Cook the Fregola Sarda and put it in a large bowl. Add the cherry tomatoes, cucumber, red onion, and fresh parsley. To make the dressing, mix the extra-virgin olive oil and balsamic vinegar in a small bowl with a whisk. Pour the dressing over the salad and toss it around to cover everything. Season with salt and pepper to taste, then add the crumbled feta cheese. Put the salad in the fridge for at least 30 minutes before you serve it. It's a tasty and refreshing dish for brunch!
