Budget menu day 2- Sunday roast

The second day of my weekly challenge to create six meals on as less money as possible. Just a reminder I did have some things In stock and made use of what I already had to create a tasty menu

Sundays meal – Sunday dinner Turkey joint – 2.50 Potatoes – 1.15 Veg – frozen varieties – got Sweet corn – 32p Yorkshire puds – got Gravy – got total £3.97

Last night we had oven cooked potato and mushrooms with baked eggs.

It was yummy, but took ages to cook. I don’t know if I need to cut the potato smaller or if my oven is being temperamental. I’ll be having it again, maybe with some onions or shallots.

I watched the BBC program about cooking healthilty on a budget yesterday. Some really great recipes are on the website. Going to try one tonight.
