Oh my god, I laughed so hard I spilled my coffee. This is SO San Francisco. All of my yoga-loving friends need to watch this, calling tacosaysroar, shefallsup and busydaddy
Whilst mums and dads know that home-cooked food is best for their children, they can be put off eating real, home-cooked food as it can be too consuming to prepare. In the busy life-style of many parents, cooking from scratch seems like a no-can-do task.
The tradition of home-cooked dinners has declined and now crisps and frozen pizza are on the weekly menu of 6-8 year olds.
It’s a shame that children are eating convenience foods regularly from such early age as, apart from the health implications, it also means that youngsters are unaware of the benefits of preparing fresh meals.
At Taskhub we want to encourage parents to stop turning to takeaways and instead make homemade meals. So here’s a quick recipe for a healthy meal that only takes 15 minutes to prepare and 15 minutes to cook.
Spinach, Mushroom & Lemon Pilaf
Ingredients
200g spinach, washed & roughly chopped
lemon, zested and juiced
2 garlic cloves, crushed
50g butter
250g basmati rice
150g chestnut mushrooms, sliced
2 onions, finely sliced
1 cinnamon stick
4 whole cloves
4 bruised cardamom pods
Method
Cook the onion and garlic in the butter in a large shallow pan until soft and golden.
Add the mushrooms and cook until softened.
Add the spices and cook for 2 minutes, then stir in the rice, lemon zest and stock. Cover.
Cook on a gentle heat for about 15 minutes until the liquid has been absorbed.
Stir through the spinach and lemon juice, cover for 2 minutes until wilted.
Serve.
