Tried making all of my own meals this week from scratch. It was really nice working with vegetables I have never worked with before: daikon, spaghetti squash, turnip, radish, ginger. I don’t like ginger but it has too many health benefits to forgo altogether. Anyways, not adhering to any sort of diet but the way I have decided I wanted to eat (no processed foods, no dairy, no sugar) is decidedly plant-based. I have quite liked everything I have made so far. Not feeling full, not feeling hungry. Need to find a way to incorporate more protein but, until then, I am still eating fish (just maybe once or twice a week). These aren’t all of the things I made but they were my best efforts (the spaghetti squash, for example, was good but looked gross so I didn’t post it). Top Left: Ancient Grains Penne with olive oil, daikon, turnip, turnip greens, garlic, red cabbage and sprouts. This is the first time I have had pasta without a morsel of parmasan and I liked it. Tasted nice and clean. I did add some Maldon’s at the end just because the pasta needed something. Top Right: Sunrise Smoothie (banana, mango, pineapple, raspberries, coconut water, fresh squeezed lemon) Paleo Blueberry Muffin I made with almond flour and no sugar. I topped it with some rhubarb-strawberry compote that I made (just the fruit, no sugar - is that still a compote? Oh well). Bottom Left: Detox Salad. My favorite! Kale, red cabbage, broccoli, carrots, red bell pepper, avocado, and parsley.The dressing consisted of Grapeseed Oil, fresh squeezed lemon juice, fresh ginger, whole grain mustard, pure maple syrup, and salt. I topped it with sunflower seeds and dried cranberries. Lasted me 3 days so it was well worth the time it took to chop everything up (I hate chopping. It’s too boring). Bottom Right: hearty oatmeal topped with bananas, blueberries, and some of my rhubarb-strawberry compote. This is the first time I ever ate oatmeal without brown sugar and, though it was much less sweet than I am used to, I enjoyed that clean taste. I did end up using unsweetened almond milk just because I am used to milk with my oatmeal. Oh! As you can see, I fresh-squeezed one orange and had that on the side. That helped satisfy that sweet tooth a bit. I have just enough food to last until payday but aside from chopping veg, the annoying thing about eating this way is the cost. I usually budget $80 for 2 weeks of groceries but because healthy stuff costs so much, my budget is now $150 every 2 weeks. I had to transfer some money over from savings but I think all of the processed foods were making me sicker than I thought. I will eat like this until I can’t afford it any longer. TLDR: Eating healthy feels good but the monetary cost is scary AF.
