I forgot to show you guys my Halloween lunch! It was delicious and so easy to make. Here is the recipe:

Ingredients: 500 grams of Pumpkin 1 onion 1 or 2 cloves of garlic 600 ml of vegetable or chicken broth Whipping cream (Optional: Only if you consider that the soup is not creamy enough) Salt and pepper, to taste Ginger

If you are lactose intolerant (like me), you can skip the whipping cream by adding less broth; to ensure a creamy texture.

Procedure:

Peel and chop the pumpkin into cubes.

Chop the onion, ginger and garlic.

Sauté the onion, ginger, garlic and pumpkin in a pot with a little oil or butter, until the onions are transparent.

Add the broth to the pot and cook until the pumpkin is tender.

Transfer the contents of the pot to a blender and blend until it thickens. If it is too runny, add the whipping cream.

Transfer the contents of the blender back to the pot. Season with salt and pepper to taste.

Serve and garnish with Parmesan cheese or pumpkin oil!
