Cumin-Mint Cuscus with Warm Roasted baby Beets Salad By Chef Rango Inc. This recipe lets beets shine. It's a hearty main dish salad that is beautiful on the plate, too. If I have it, I like to use avocado oil in this salad. INGREDIENTS Roasting beets: 12 fresh beets, clean, skin on roast whole 1-1/2 cups orange juice, place in pan with beets 4 clove garlic, 1 shallot, ruffly chopped 2 tablespoons olive oil 2 tablespoons balsamic vinegar 4 teaspoon stems fresh thyme Method: Pre-heat oven are 350F°. Place ingredients in a roasting pan cover with aluminum foil and roast for 2:00 hours or until for tender. Take the braising liquid and place in a food processor and blend until smooth ajuste with oil, vinegar and mint.
