For those of you who may not be aware but today is Canada Day. The birthday of the country of maple syrup, coffee crisp candy bars, poutine and ketchup chips. And so what better time then today to finally break into these 3 CANADIAN GROWN teas from the Westholme Tea Company in British Columbia.
I made a post about these teas around this time last year when I was finally able to get my hand on some of these fresh Canadian teas, but never got around to tasting them. These teas are made in very small amounts and run a very high price for the limited time they are available each year. These 3 10g bags costs a little over $100 when I bought them last year. I bought 3 of their 5 yearly releases in a Black, Green and White tea.
Huron’s Wake - Black Tea
The dry leaf has an intense buttery aroma with heavy notes of roasted nuts with a subtle fruitiness hiding in the background. The wet leaf has a rich and robust aromas of roasted coffee grounds, sweeter notes of ripe stone fruit and a less intense but still very up front aroma of roasted nuts. As the leaves cooled they developed a kind of floral aroma.
The tea has a very subtle bitterness to it but almost unnoticeable. The mouthfeel is soft and smooth. Sweet flavors of stone fruit compliment a sift nuttiness, which faded a bit on the second infusion with a more present fruity flavor of apricot and a new floral development. Subsequent infusions presented much more floral and sweeter. At time this one reminded me a lot of purple leaf black teas.
Tree Frog Green - Green Tea
Very sweet dry leaf and a fresh grassy aroma that transitioned into a lovely grape like aroma. The wet leaf has deeper grassy notes with an additional vegetal note, and a spicy note somewhat like cloves. The grape aroma returned as the wet leaves cooled.
The tea has a very delicate and sift fruity flavor of plum or apricot. Creamy mouthfeel which compliments notes of vanilla and a sweet grassy flavor with hints of spice. Subsequent infusions were a bit stronger with less spiciness and a delectable creamy flavor like coconut milk which compliments the grassiness and vegetal notes.
White Mist - White Tea
The dry leaf is sweet and smells of red stone fruit flesh. It also has a lovely baked aroma and fresh leafy notes. The leafy aroma was very strong on the wet leaf with a very potent not of unripened stone fruit and berries.
The tea is creamy and soft on the tongue. It has a delicate floralness that I can best describe as being between a Bai Mudan and Moonlight White. A subtle vanilla and marshmallow fluff sweetness and a fresh leafy finish. The flavor did not change much as the infusions went on but did start to present a nice milky flavor which coated the mouth after swallowing.
I can only hope that one day the farm from which the teas hail, will grow to such an extent that these can be produced and sold in larger quantities. There is no doubt that the odd Canadian seasons and especially winter has shown it’s effect on the growth of the tea plants, giving them a unique profile.
