A delicious and gluten-free twist on the classic Caprese salad, this oven-baked Caprese Chicken is bursting with flavor. Juicy chicken breasts are seasoned and baked to perfection, then topped with fresh mozzarella, cherry tomatoes, and a drizzle of balsamic glaze. It's a healthy and satisfying meal that's sure to please your taste buds.
Ingredients: 4 boneless, skinless chicken breasts. 2 tablespoons olive oil. 2 teaspoons Italian seasoning. Salt and pepper, to taste. 2 cups cherry tomatoes, halved. 1 cup fresh basil leaves. 1 cup fresh mozzarella cheese, sliced. Balsamic glaze, for drizzling gluten-free. Fresh basil leaves, for garnish.
Instructions: Turn on your oven and heat it up to 375F 190C. Put the chicken breasts on a baking sheet that has parchment paper on it. Mix Italian seasoning, salt, and pepper with the olive oil and pour it over the chicken breasts. Place the chicken breasts on the baking sheet and surround them with the cherry tomatoes that have been cut in half. Warm the oven up and put the chicken in it. Bake for 25 to 30 minutes, or until it's fully cooked and no longer pink in the middle. Put the fresh basil leaves in a stack, roll them up, and cut them into thin ribbons while the chicken is baking. Take the chicken out of the oven when it's done and put fresh mozzarella slices on top of each breast right away. Put the baking sheet back in the oven and bake for another three to five minutes, or until the cheese melts and bubbles. Take it out of the oven and sprinkle with the minced basil leaves. Add the balsamic glaze to the chicken and tomatoes and mix it in. If you want, you can add more fresh basil leaves as a garnish. Glad you liked the gluten-free Caprese Chicken!
