Ingredients:
Apples:
1T butter, unsalted
2 large Granny Smith apples, peeled and chopped finely
1tsp lemon juice
2T white sugar, granulated
0.5tsp sea salt
1tsp cinnamon
1tsp all spice
Dough:
3c bread flour
1/3c white sugar, granulated
2T baking powder
1tsp baking soda
1/2c cold, unsalted butter, diced
1c sour cream, greek yogurt
0.5c buttermilk, room temperature
Caramel Icing:
4T butter, unsalted
1/2c light brown sugar, paced
2T milk
1/4tsp vanilla extract
1c powdered sugar
Directions:
1. Preheat the oven to 350 degrees.
2. Apples: Melt butter in a small saucepan over medium heat. Add the apples, stir and cook until the apples are softened. Stir in the seasonings and set the apples aside to cool (5-minutes).
3. Dough: Mix together the flour, sugar, baking powder, and baking soda. Add the butter and mix again until coarse crumbs form (mixer or food processor). Stir in the sour cream/yogurt then and apples until the dough comes together. The dough maybe dry, add buttermilk until the dough gets a little wet. Using an ice cream scooper - make the scones and place them a half-inch apart.
4. Bake the scones: Bake scones for 15 to 20 minutes until the scones are cooked through and no longer doughy in the middle. Place scone on a cooling rack. (15-20-minutes)
5. Caramel Icing: In small saucepan, heat butter until melted and stir in both brown sugar and milk. Cook over medium-low heat for (1-minute). Transfer mixture to a mixing bowl; add powder sugar and vanilla extract. Drizzle icing over warm scones.
