Sounds a bit unusual, right? But I promise this is a delicious pasta dish; another one of my nan’s oldest recipes. I loved it as a child; but to be honest I loved every single pasta my nan made! I got always super miffed, when she tried to cook me store bought ones…If you don’t have the time to make the pasta yourself, you can of course buy something as a substitute (like a tagliatelle or papardelle, I think).
Pasta with caramelised cabbage
Ingredients:
Pasta:
500 g flour
4 eggs
little bit of water
Caramelised cabbage:
1 medium sized cabbage
1 onion
2 tbsp sugar
1 1/2 tsp pepper
about 2 tsp salt
2-3 tbsp vegetable oil
Method:
If you decide to make the pasta at home, you can check out this earlier post about home-made tagliatelle! If you want to, you can cut it up any way you like, but I tried to make little triangle shapes, like my nan always did :) So, cook your pasta in boiling salt water and put it away. Onto the cabbage; use a cabbage slicer to shred it to little pieces. Chop the onion finely. Get out a pan (be sure it’s big enough for all the cabbage you’re using!) and pour in a few tablespoons of oil. Heat it up. Add the sugar and caramelise it. Add the onion and cook until opaque. Season with pepper and salt and add the cabbage. Stir well and then cover it with a lid and let it cook until it’s tender. Pour a small amount of water on the cabbage and stir it occasionally; just to make sure it doesn’t burn. When it’s done, check the taste, season if necessary and stir in the pasta. Done!
