The potatoes, onions, and caraway seeds in these cakes give them a lot of flavor. The cakes are crispy on the outside and fluffy on the inside. They're great as a snack or side dish.
Ingredients: 3 medium potatoes, peeled and grated. 1 small onion, grated. 2 tablespoons caraway seeds. 1/2 cup breadcrumbs. 2 eggs, beaten. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: Grate the potatoes and onion and add the caraway seeds, breadcrumbs, beaten eggs, salt, and pepper. Mix everything together in a large bowl. Mix the ingredients together well until they are spread out evenly. Set a pan on medium heat and add the olive oil. Make little cakes out of the potato mix and put them in the pan. Each side should be cooked for 5 to 7 minutes, or until golden brown and crispy. Take it out of the pan and put it on a plate lined with paper towels to drain the extra oil. As a tasty side dish or snack, serve hot.
