No Vice President has ever been assassinated. Spencer Perceval is the only British Prime Minister to be assassinated.
One Governor -- William Goebel of Kentucky -- has been assassinated. It’s actually a really fascinating story, too. There’s a lot more to it than this but basically, there was a dispute after the 1899 Gubernatorial election in Kentucky. Initially, Goebel lost, but the Kentucky legislature eventually decided it in Goebel’s favor. However, a sniper (still unknown) shot Goebel as he was walking to the Capitol before being inaugurated. He was sworn in the next day, on his deathbed, and died a few days later.
As for Mayors, I’m not sure how many have been assassinated, but there have definitely been at least a handful. Off the top of my head, I can think of two big-city Mayors who were assassinated: George Moscone of San Francisco, who was killed alongside Harvey Milk in 1978, and Carter Harrison of Chicago, who was assassinated shortly before the end of the 1893 World’s Columbian Exposition in Chicago. William Gaynor of New York City actually survived being shot in the throat during his term. There’s a very famous photo that was taken milliseconds after Mayor Gaynor was shot:
