Instead of regular mayonnaise, try this Vegan Cashew Mayo, which is creamy and sour. With its seasoned cashews and soaked nuts, it's great for putting on sandwiches or pouring over salads.
Ingredients: 1 cup raw cashews, soaked overnight. 1/4 cup water. 2 tablespoons lemon juice. 1 tablespoon apple cider vinegar. 1 teaspoon dijon mustard. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. Salt and pepper to taste.
Instructions: The cashews should be drained and rinsed. Melt the butter and add the water, lemon juice, apple cider vinegar, Dijon mustard, garlic powder, and onion powder to a blender. As needed, scrape down the sides of the blender to make it smooth and creamy. If you want, you can add more salt and pepper to taste. To let the flavors blend, put the cashew mayo in a jar or other container and put it in the fridge for at least 30 minutes. Spread it on sandwiches, salads, or wraps as a creamy vegan spread or dress it.
