Avocado and Smoked Tofu Penne
I can't really write an interesting story about pasta, but everyone likes pasta so it deserves a recipe even if there is no story. I like a lot of pasta so I'm not going to specify an amount here. I don't know the acceptable amount and don't want to embarrass myself with my gluttony.
A cup of chopped mushrooms
Basil, parsley, salt, pepper
Cook your pasta, you know how to do that I'm not explaining it here. Whilst its cooking away chop your tomatoes and sautee them alongside your mushrooms and smoked tofu. I used Cauldron's smoked tofu because its it comes in perfect little pre cut squares. Whilst this is cooking up steam your spinach. You get perfect steamed spinach by sitting it in a sieve or colander, boiling some water and pouring the water over it. No risk of floppy spinach, no floppy leaves in this house.
Sit your spinach down and cut up your avocado. You want to cook your tofu etc for about ten minutes then through in your spinach and avocado just until its warm. So like not even a minute.
I make a sauce by mixing up a couple of table spoons of olive oil with a tea spoon of tomato paste and then mixing in my herbs, salt and pepper. I saw my dad do this once and though it was genius. It really is. He's so smart.
Mix everything together and eat it all up.
