A low-carb take on the classic tuna mac and cheese that uses cauliflower instead of pasta. This keto-friendly dish is creamy, cheesy, and full of flavor. It's great for a quick and filling meal.
Ingredients: 2 cups of cauliflower florets. 1 can of tuna, drained. 1/2 cup of shredded cheddar cheese. 1/4 cup of heavy cream. 2 tablespoons of cream cheese. 1 tablespoon of butter. 1/2 teaspoon of garlic powder. Salt and pepper to taste. Chopped parsley for garnish optional.
Instructions: Once the cauliflower florets are soft, steam or boil them and then drain them well. Set the pan on medium heat and melt the butter. Put the drained tuna in the pan and use a spatula to break it up. Give it a stir, then cook for one to two minutes. Put the steamed cauliflower in the pan with the tuna and mix it in well. The heavy cream and cream cheese should be mixed in until everything is smooth. Shred the cheddar cheese and add it to the pan. Stir it around until it melts and is fully mixed in. Add pepper and salt to taste. If you want, you can add chopped parsley as a garnish before serving.
