With these keto-friendly sushi rolls, you can enjoy the tastes of sushi without the carbs. Instead of rice, cauliflower rice is used, and smoked salmon and cream cheese add flavor and richness.
Ingredients: 4 nori seaweed sheets. 1 cauliflower head, riced. 1/4 cup rice vinegar. 2 tbsp erythritol or preferred keto-friendly sweetener. 1 avocado, sliced. 1/2 cucumber, julienned. 4 oz smoked salmon. 4 oz cream cheese. Soy sauce or coconut aminos, for dipping. Wasabi and pickled ginger, for serving optional.
Instructions: In a bowl, mix riced cauliflower with rice vinegar and sweetener. Lay out a nori sheet on a bamboo sushi mat. Spread a thin layer of cauliflower rice over the nori sheet, leaving a border around the edges. Layer avocado slices, cucumber, smoked salmon, and cream cheese on top of the cauliflower rice. Roll the sushi tightly using the bamboo mat, applying gentle pressure as you roll. Slice the roll into bite-sized pieces using a sharp knife. Repeat with remaining ingredients. Serve with soy sauce or coconut aminos, and optional wasabi and pickled ginger.
